Preparing tea: basic tips

The infusion time, the quantity, the temperature of the water, for a perfect tea ...

Each tea has a preparation. You must of course test yourself, experiment, because depending on the quality of your tea, the hardness of your water and of course your taste, the results may vary.
Here you will find the basic preparations for the most common teas.

 


Prepare black tea

For a cup, count 150ml of water for 1.5 to 2g of tea, i.e. one teaspoon.
Preheat the teapot by pouring hot water into it and pouring it out.
Pour simmering water (85 to 95 ° C) over the tea.
Let the tea steep for 3 to 5 minutes. No more, otherwise it becomes bitter.
For a Darjeeling, allow 2 to 4 minutes. An Assam will support up to 5 min of infusion.
The longer the tea infuses, the more tannin it will release which will cancel out the exciting effect of the theine. Beyond 5 minutes, the tannin / theine balance is upset and the tea will lose taste quality.


Conclusion :
For a stimulating tea: 2-3 minutes of infusion
For a relaxing tea: up to 5 minutes of infusion.

 


🍵 Prepare green tea

Green tea releases its substances more easily than black tea. This influences the preparation of tea.
For green tea, 1g will suffice for 100ml of water.
The water temperature will be around 80 °C (let the boiled water cool for about 8 minutes).
Infuse 1 to 3 minutes.
For some very fine green teas, water at 60 °C and an infusion of 1 to 1.5 minutes will suffice. For a hot tea, remember to pre-heat your cup.

Green tea can be re-brewed if the leaves are still wet.
In all cases, follow the advice of your retailer or the instructions on the packaging.

 

🍵 Matcha

The finest of green teas.
Matcha is the oldest kind of Japanese tea and is considered the king of green teas.
Ideally, the Matcha powder will be sifted and then mixed with the water with a whisk.
Vigorously beat 1 half teaspoon in hot water (about 80 °C) for 30 seconds until a nice airy, soft and creamy foam is obtained.


 

🐉 Oolong tea

The correct preparation:
Water at 95 ° C and infuse for 3-5 min. The water should no longer be simmering.
You can use Oolong tea several times.


🍓 The fruity infusion

For a liter of tea, infuse 15-20g of fruity mixture in simmering water for 5 to 10 minutes according to your tastes.
After 10 min the mixture may turn bitter. Fruit infusions can usually be infused several times.

 


🌿 Herbal tea

Herbal teas are generally infused for 5 to 10 minutes, or even more depending on the plants.
In all cases, follow the advice and directions on the packaging.

 

🌸 Lapacho

In 1 liter of simmering water, boil 5 min then let infuse 20 min.
You can add sugar or honey.

 


🧉 Mate

For a large cup, infuse 1 teaspoon of mate in water at 80 ° C.
A 5min infusion will give a tonic tea. For a less stimulating tea, let steep longer.

 


🇿🇦 The Rooibos

Rooibos requires a relatively long infusion.
For a cup, pour boiling water over ½ teaspoon of rooibos tea, let steep 7-10 min.
This tea is drunk cold as well as hot.

☕ Pu Erh Tee

For one liter of tea, pour simmering water over 10-12 grams of leaves placed in a filter.
The filter allows you to collect the leaves as you can brew them multiple times.
Infuse 3-5 min.
